Nc'nean Quiet Rebels Simon 2025 Single Malt Whisky 70cl: Limited Edition Organic Scotch Finished in Stout Casks

Quiet Rebels Simon is a limited edition from Nc'nean Distillery, created by distiller Simon, a former chef and self-confessed beer fanatic. It is bottled at 48.5% ABV.

The organic whisky was first matured in shaved, toasted and re-charred red wine casks, then finished in stout casks from Innis & Gunn that had previously held Nc'nean whisky. Only 6,894 bottles were produced, bottled in July 2025.

Expect chocolate brioche, coffee fudge cake and cherry jam, with malt loaf, treacle and baking spice adding depth.

It is certified organic, non-chill filtered and naturally coloured.
