This exceptional single cask release from the M&H (Milk & Honey) Distillery represents a fascinating collision of climates and cultures. Distilled in the heart of vibrant Tel Aviv in 2017 and bottled in 2022, this expression has spent its entire life maturing in a cask that previously held heavily peated Scotch whisky from the shores of Islay.


Because of Israel’s Mediterranean climate, the "Angel’s Share" is high, leading to a rapid and intense maturation. In just five years, this spirit has achieved a depth and complexity that would take decades in colder climates. The result? A bold, sun-drenched malt that carries the unmistakable salty, medicinal kiss of the Scottish Isles.


Tasting Notes




  • Nose: Immediate notes of campfire smoke and charred lemon peel, followed by a delicate sweetness of wildflower honey and vanilla bean.




  • Palate: A creamy mouthfeel reveals layers of earthy peat, sea salt, and ripe orchard fruits. The ex-Islay influence provides a sturdy backbone of medicinal smoke without overmasking the distillery's signature floral character.




  • Finish: Long and warming. A lingering tingle of black pepper and oak spice, rounded off by a faint hint of coastal brine.





Distillery Note: This is a Single Cask bottling, meaning once these limited bottles are gone, this specific profile will never be replicated. Non-chill filtered and bottled at natural color.
