This exceptional spirit is aged using the traditional Solera system, a dynamic aging process where the spirit is meticulously moved through a series of barrels. This ensures a consistent, high-quality profile with an average age of 15 years. While the name might sound like a popular ice cream treat (and we can dream of a world where they were aged side-by-side), the reality is far more sophisticated: it matures in barrels that previously held Oloroso and Pedro Ximénez sherries, resulting in a dark, complex, and velvety brandy that is truly world-class.
